Filter roasts and omni roasts. They're roasted lighter than espresso roasts, so acidity and fruit come through more clearly in a pour-over, a French press or a drip machine.

A good starting point is 60 g of coffee per litre of water (about 1:16.5), water just off the boil at 92–94 °C, a medium grind for pour-over and coarser for a French press.

Keep whole beans cool, dry, dark and airtight — the original bag with its valve closed is enough. Not in the fridge: condensation and stray odours do more harm than room temperature. Grind only just before you brew.
